Meat nests made from seasoned ground beef pressed into muffin tins and filled with mashed potatoes. A fun, kid-friendly dinner that’s part meatloaf, part shepherd’s pie.

Meat nests are a clever retro dinner idea. Seasoned ground beef gets pressed into muffin tins to form little cups, filled with mashed potatoes, and baked until the meat firms up and the potato tops turn golden with a dusting of paprika.

Think of them as individual shepherd’s pies turned inside out. The meat forms the shell instead of sitting under the potato, which means every bite has crispy browned beef edges with a fluffy potato center. Kids love them because they’re fun to eat and perfectly portioned.

Breadcrumbs and milk mixed into the beef work like a panade, keeping the meat tender and moist during baking. Without them, the thin meat walls would dry out and crumble. Flour helps bind everything together so the nests hold their cup shape when you pop them out of the tin.

Kitchen Tips

  • Press the meat evenly to about ¼ inch thick on the bottom and sides. Thin spots cook faster and can crack, letting the potato filling leak through.
  • Use extra lean ground beef. Fattier meat will shrink more during baking and the cups will lose their shape.
  • Don’t overfill with mashed potatoes. Two tablespoons per nest is plenty. Overfilling makes them hard to remove from the tin.
  • Let them cool for 5 minutes in the tin before removing. They firm up and come out cleanly.

Variations

  • Top with shredded cheddar cheese during the last 5 minutes of baking for a melted cheese cap.
  • Mix diced onion and garlic into the meat mixture for more savory depth.
  • Fill with creamed corn or cheesy broccoli instead of mashed potatoes for variety.

Directions

Mix together ground beef, flour, salt and pepper and bread crumbs.

Line ungreased muffin tins with ground beef mixture about ¼ inch thick.

Fill meat nests with 2 tablespoons mashed potatoes.

Sprinkle with paprika. Bake at 350℉ (180℃). for 25 to 30 minutes.
