This retro layer cake gets its pretty pink tint and sweet cherry flavor from maraschino cherry juice stirred right into the batter, along with chopped maraschino cherries and nuts folded in at the end.

Using egg whites instead of whole eggs keeps the crumb light and lets that pink color come through without turning muddy. The batter mixes up fast: sift the dry ingredients, add the shortening, cherry juice, cherries, and milk, beat for two minutes, add the egg whites, and beat two more. No creaming step, no fuss.

Topped with billowy 7-minute icing and decorated with whole maraschino cherries, this is the kind of cake that steals the show at birthdays, showers, and holiday parties without requiring pastry school skills.

Kitchen Tips

  • Drain the cherries well and pat them dry before cutting into eighths. Wet cherry pieces sink to the bottom of the batter.

Directions

Sift together in mixing bowl flour, sugar, baking powder and salt.

Add shortening, cherry juice, cherries and milk.

Mix on slow to medium speed for 2 minutes.

Add egg whites and continue beating 2 more minutes.

Add nuts.

Bake in two layers in 350℉ (180℃) oven for 30 to 35 minutes.

Ice with 7 minute icing and decorate with cherries.
