| 1 | teaspoon | mustard seeds | |
| 1 | x | potatoes | as needed, chopped |
| 1 | x | carrots | as needed, chopped |
| 1 | x | cauliflower florets | as needed, chopped |
| 1 | x | broccoli florets | as needed, chopped |
| 1 | x | green peas | as needed, chopped |
| 1 | x | string beans | as needed, chopped |
| 1 | x | cashew nuts | as needed, chopped |
| 1/2 | teaspoon | turmeric | |
| 1 | cup | rice | |
| 2 | cups | water | |
| 1 | teaspoon | salt | |
| 2 | teaspoons | curry powder |
Place oil in Dutch oven, add mustard seeds.
Fry until seeds pop.
Add vegetables and fry on low heat for about 5 minutes, with cover on pan.
Add turmeric.
Wash and dry rice. Add rice to vegetables and fry for a minute.
Do not brown.
Add curry powder, salt and water.
Cover and bake at 350 degrees for 20 minutes.

Excellent combination of Ingredients. Has great texture as finger food. Makes parties and social get togethers fun. Can be made as a "Fat-Free" dish. Just leave out the Avacado and use a Very Lean Ground Meat that has been drained and rinsed after cooking. Fat-Free ReFried Beans are easily found. An Excellent Cholesterol Free Dish also.
