Ingredients

2 tablespoons vegetable oil
1 teaspoon mustard seeds
1 x potatoes as needed, chopped
1 x carrots as needed, chopped
1 x cauliflower florets as needed, chopped
1 x broccoli florets as needed, chopped
1 x green peas as needed, chopped
1 x string beans as needed, chopped
1 x cashew nuts as needed, chopped
1/2 teaspoon turmeric
1 cup rice
2 cups water
1 teaspoon salt
2 teaspoons curry powder

Directions

Place oil in Dutch oven, add mustard seeds.

Fry until seeds pop.

Add vegetables and fry on low heat for about 5 minutes, with cover on pan.

Add turmeric.

Wash and dry rice. Add rice to vegetables and fry for a minute.

Do not brown.

Add curry powder, salt and water.

Cover and bake at 350 degrees for 20 minutes.

Picante Super Skillet Nachos

Excellent combination of Ingredients. Has great texture as finger food. Makes parties and social get togethers fun. Can be made as a "Fat-Free" dish. Just leave out the Avacado and use a Very Lean Ground Meat that has been drained and rinsed after cooking. Fat-Free ReFried Beans are easily found. An Excellent Cholesterol Free Dish also.
