Hollywood Hash: a big-batch ground beef and bacon casserole with noodles, cream of mushroom soup, peas, mushrooms, and cubed cheese. Freezes perfectly and feeds a crowd.

30 minThis is the kind of big-batch casserole that solved dinner three times over. Ground beef and bacon cooked in the same pan, onion sauteed in the bacon drippings, then everything mixed with noodles, cream of mushroom soup, canned peas and mushrooms, and a full pound of cubed soft cheese that melts through the whole thing.
The recipe even tells you how to portion it: divide into three smaller casserole dishes and freeze two of them for later. That’s real weeknight thinking.
Feeds a crowd straight from the pot or fills the freezer for nights when you have nothing.
Kitchen Tips
- Saute the onion in the bacon drippings rather than fresh oil. That’s where the flavor difference is.
- The peas go in with their liquid, which adds body to the sauce and keeps the casserole from drying out.
- Cool to room temperature before freezing, and defrost in the fridge overnight before reheating.
Ingredients
Directions
Dice and cook bacon.
Allow 1 minute per slice on high.
Remove bacon from drippings.
Dice and sauté onion in bacon drippings about 2 minutes on high.
Cook hamburger in covered large mixing bowl 8 to 10 minutes stirring occasionally, on high.
Cook noodles on high, uncovered, until tender, about 8 minutes.
Use 4 cup measuring cup with 2 cups water.
Drain.
Mix together all ingredients.
Heat 10 minute or to serving temp.
May be frozen.
If prepared to serve 4 divide into 3 casserole dishes, cover, freeze, defrost and reheat as above.
