The marinade only needs 30 minutes. Shrimp absorb flavors fast, and longer marinating in the garlic and salt can make them mushy. A half hour is the sweet spot for flavor without texture loss.
Three minutes per side and they’re done. The shrimp should be pink, slightly charred at the edges, and curled into a loose C shape. If they curl into a tight O, they’ve gone too far.

Directions
Combine first six ingredients in food processor.
Pulse until mixture is coarsely chopped.
Add olive oil and process until well blended.
Combine herb mixture and shrimp in a large bowl and toss to coat.
Cover and marinate shrimp in fridge for 30 minutes.
Remove shrimp from bowl.
Thread onto 12 six inch skewers.
Prepare grill.
Place skewers on grill rack coated with cooking spray.
Grill three minutes on each side or until done.
