Groundnut Stew

Metric measurements


2cups onions chopped
2tablespoons peanut oil
1/2teaspoon cayenne pepperVideo *
1teaspoon garlic clovesVideo pressed
2cups cabbage chopped
3cups sweet potatoes, or yams cubed
3cups tomato juice
1cup apple juice
1teaspoon salt
1teaspoon ginger fresh, grated*
1tablespoon cilantro chopped*
2each tomatoes chopped
1 1/2cups okra chopped*
1/2cup peanut butter

Saute the onions in the oil for 10 minutes.

Stir in the cayenne and garlic and sauté for a couple more minutes.

Add cabbage and sweet potatoes.

Cover and sauté for a few more minutes.

Mix in the juices, salt, ginger, cilantro and tomatoes.

Cover and simmer for about 15 minutes, until the sweet potatoes are tender.

Add the okra and simmer for another 5 minutes.

Stir in the peanut butter.

Place the pot on a heat diffuser and simmer gently till ready to serve.

Add more juice if the stew is too thick.
