Ingredients

2cups pineapple, fresh fresh, chopped
1medium carrot shredded
1medium green bell pepper julienned
3tablespoons white wine vinegar
3tablespoons pineapple juice unsweetened
1tablespoon honey
1teaspoon vegetable oil
2ounces blue cheese crumbled

Directions

Combine pineapple, carrot, and green pepper in a medium bowl, toss gently.

Combine vinegar, and the next 3 ingredients and stir well with a wire whisk.

Pour over pineapple mixture and toss. Cover and chill 1 hour.

Top with blue cheese just before serving.
