| 1 | cup | raisins, seedless | |
| 1 | cup | candied cherries | coarsely chopped |
| 1 | cup | candied pineapple | coarsely chopped |
| 1 | cup | brazil nuts | coarsely chopped |
| 1/2 | cup | vegetable shortening | "golden flavour" |
| 3/4 | cup | sugar | granulated |
| 1 | each | egg | |
| 1 | teaspoon | vanilla extract | |
| 1/2 | teaspoon | almond extract | |
| 1 1/4 | cups | flour, all-purpose | |
| 1/2 | teaspoon | baking soda | |
| 1/2 | teaspoon | salt |
Cream shortening, sugar, egg and flavouring on medium speed of an electric mixer until light and creamy.
Combine flour, baking soda and salt.
Add to creamed mixture, beating on low speed until blended.
Stir in fruits.
Mix well.
Drop dough by heaping teaspoonfuls onto greased baking sheet.
Bake at 350 degrees F for 10-12 minutes or until golden.
Freezes well.

Very moist cake. The frosting was delicious! My hubby thought it was outstanding!
