| 8 | ounces | cream cheese | softened |
| 1/4 | cup | mayonnaise | or salad dressing |
| 2 | tablespoons | lemon juice | |
| 1/2 | teaspoon | salt | |
| 1/4 | teaspoon | ginger | ground |
| 1/8 | teaspoon | black pepper | |
| 4 | red hot pepper sauce (eg. Tabasco) | ||
| 2 | cups | chicken | cooked, finely cut up |
| 2 | large | eggs | hard-cooked, chopped |
| 1/4 | cup | scallions, spring or green onions | sliced |
| Toppings | |||
| 3 | each | green bell pepper | rings |
| 1 | tablespoon | sesame seeds | toasted |
| 3 | tablespoons | scallions, spring or green onions | chopped, or green pepper |
| 3 | tablespoons | olives | chopped, ripe, pitted |
| 3 | tablespoons | pimiento | drained, chopped |
Mix cheese, mayonnaise, lemon juice, salt, ginger, pepper, and pepper sauce.
Stir in chicken, eggs, and 1/4 cup onions.
Shape into log, 8x2 inches.
Wrap in plastic wrap; refrigerate until firm, about 4 hours.
Cut each green pepper ring once to make a curled strip.
Place strips diagonally across log, dividing log into fourths.
Sprinkle each section with one of the four remaining toppings.
Serve with crackers.
Fantastic and can leave ingredients out or subsitute and still fabulous. Excellent for lunches on toasted bagels or crackers for a party. I have made this several times and it is always a hit!!!

Wonderful flavors. I substituted 1/2 cup of white wine for 1/2 cup of the cream. Adjusting flavor with salt and pepper before serving is critical. My house still smells great from preparing this aromatic dish!
