Ingredients

2cups chickpeas (garbanzo beans) cooked
1each eggVideo beaten
3cloves garlicVideo crushed
1/4cup celery finely minced
1/4cup scallions, spring or green onions finely minced
1/2teaspoon cumin ground
1/4teaspoon turmeric *
1 1/2tablespoons flour, all-purpose
1/8teaspoon cayenne pepperVideo *
1dash black pepper *
3/4teaspoon salt
Felafel sauce
1cup yogurt
2tablespoons tahini
1tablespoon lemon juice
3cloves garlicVideo crushed
1/4teaspoon cumin *

Directions

Put ingredients in food processor.

Chill well.

With floured hands, make the batter into one dozen patties.

Dust each lightly with flour.

Heat a 2-inch pool of oil in a heavy skillet to 365 degrees F.

Deep fry felafel until golden brown and serve in pitas with sauce, lettuce, and tomatoes.
