| 8 | each | flour tortillas | |
| 1 1/2 | cups | monterey jack cheese | shredded |
| 1 | cup | corn kernels | frozen |
| 4 | each | scallions, spring or green onions | sliced |
| 2 | large | eggs | |
| 1 | cup | buttermilk | |
| 4 | ounces | chili pepper | diced |
Grease a 2 quart square baking dish.
Tear tortillas into bite size pieces.
Arrange half the tortillas in the baking dish.
Top with half of the cheese, half of the corn, and half of the Green onions.
Repeat layering with the remaining tortillas, cheese, corn, and onions.
Stir together eggs, buttermilk and chili peppers, Gently pour over tortilla mixture.
Bake, uncovered in a 325 degrees F. oven about 30 minutes or until a knife inserted near the center comes out clean.
Serve warms.
This would make a nice starchy side dish. I didn't think the tortilla shells would absorb the buttermilk and eggs, but it did, for the most part. Admittedly, I added an extra egg, an extra 1/4 cup of buttermilk, and an extra 1/3 cup of corn (I used can corn, which was more than 1 cup, and which turned out fine). Instead of adding peppers, I used pepper jack cheese. It worked out fine and the corn's sweetness was a nice compliment to the spicy cheese. Easy to prepare. Nice looking dish and the. Side note: I like idea of using tortilla pieces as a bottom and middle layer for a casserole and wonder if some sort of mushroom concoction might also be good used in that way.

This recipe sounds really good, a good side dish or main dish works too, and the photo looks great.
If you add mushrooms I would make sure to cook them in a skillet first to remove some of the moisture, then add as one of the layers.
Good point. Something about the thought of those mushrooms with the pepper Jack cheese and buttermilk seems appealing to me. I think I'd probably want to add a different veggie to go with it. Corn and mushrooms,,,hmmm? Broccoli maybe? suggestions?

ove these beautiful pancakes, I used 1 cup frozen cranberries, these pancakes were cooked very well, I made these for breakfast today, amazed me, served with maple syrup, yummy.
