7 hrsThese aren’t your grandma’s stuffed peppers: they’re packed with ground beef, sweet corn, and melted cheddar for a Southwestern spin that kids actually beg for.
The slow cooker makes the peppers meltingly soft while the filling stays moist and flavorful.
One pepper is a meal.
Kitchen Tips
- Brown and drain the ground beef before adding to prevent greasy filling
- Red bell peppers are sweeter than green if you want less vegetal flavor
- Top with sour cream, green onions, and crushed tortilla chips when serving for extra flair
