These aren’t your grandma’s stuffed peppers: they’re packed with ground beef, sweet corn, and melted cheddar for a Southwestern spin that kids actually beg for.

The slow cooker makes the peppers meltingly soft while the filling stays moist and flavorful.

One pepper is a meal.

  • Brown and drain the ground beef before adding to prevent greasy filling

Directions

Wash peppers and drain well.

Combine all remaining ingredients except ketchup in mixing bowl.

Stir well. Stuff peppers ⅔ full.

Pour 3 tablespoons water in crockpot.

Arrange stuffed peppers in crockpot. Pour ketchup over top of peppers.

Cover and cook on low 7 to 9 hours or high 3 to 4 hours.
