This is the slow cooker chicken recipe for the days when you have zero energy to cook but still want something that tastes like you tried. Chicken breasts go into the Crockpot, get topped with pineapple chunks, Dijon mustard, soy sauce, and garlic, and that’s it. Set it and forget it.
The magic happens during those hours of low, slow cooking. The pineapple breaks down and releases its juice, which mixes with the soy sauce and mustard into a sweet-savory-tangy sauce that glazes the chicken. Arrange chicken in bottom of crockpot.
Sprinkle with pepper and paprika.
In a small bowl, combine drained pineapple tidbits, mustard and soy sauce.
Pour over chicken.
Add minced garlic.
Cover and cook on LOW 7 to 9 hours or HIGH 3 to 4 hours.
