80 minThis is the kind of dessert that makes someone feel truly spoiled. Heart-shaped cocoa sponge cakes sit on a plate surrounded by swirls of raspberry sauce and chocolate syrup, garnished with fresh raspberries and mint. It looks like it came from a fine dining kitchen.
The sponge is light and airy, built on whipped egg whites and yolks folded together with cocoa and flour. Baked in a sheet pan, cooled, and then cut into hearts with cookie cutters of various sizes.
Both sauces are made from scratch and can be prepared a day ahead. The raspberry sauce is bright and tangy, the chocolate sauce is glossy and bittersweet. Together they turn a simple sponge into a showstopper.
Pro Tips
- Make the cake up to 8 hours ahead and wrap tightly so it stays moist for cutting
- Cut the hearts as close together as possible; freeze scraps for trifle or chocolate pudding later
- Pool the two sauces side by side on the plate and drag a toothpick through for a fancy swirl pattern
