A quick chicken noodle casserole for two, made in the microwave with egg noodles, canned chicken, cream of mushroom soup, sour cream, and melted cheddar. Ready in 30 minutes flat.

When you need dinner for two and you need it now, this microwave chicken noodle casserole has your back. It comes together in about 30 minutes with pantry staples you probably already have on hand.

Egg noodles get tossed with cream of mushroom soup, light sour cream, skim milk, mixed veggies, and flaked canned chicken. Everything goes into a casserole dish and into the microwave until bubbly, then gets a blanket of melted cheddar on top.

It’s comfort food without the hour-long oven wait. No fancy technique required.

Kitchen Tips

  • Swap canned chicken for leftover rotisserie chicken if you have some on hand
  • Stir halfway through microwaving to make sure it heats evenly
  • Add a pinch of garlic powder or a splash of hot sauce to punch up the flavor

Directions

Cook egg noodles according to package directions.

In a 2-quart casserole dish, combine soup, ½ cup cheese, milk, and sour cream.

Mix well.

Stir in noodles, vegetables, and chicken. Mix well.

Microwave, covered, on high for 10 minutes, or until heated through, stirring once.

Sprinkle remaining cheese on top.

Microwave, on high, for 2 minutes, or until cheese has melted.
