30 minWhen you need dinner for two and you need it now, this microwave chicken noodle casserole has your back. It comes together in about 30 minutes with pantry staples you probably already have on hand.
Egg noodles get tossed with cream of mushroom soup, light sour cream, skim milk, mixed veggies, and flaked canned chicken. Everything goes into a casserole dish and into the microwave until bubbly, then gets a blanket of melted cheddar on top.
It’s comfort food without the hour-long oven wait. No fancy technique required.

- Swap canned chicken for leftover rotisserie chicken if you have some on hand
- Stir halfway through microwaving to make sure it heats evenly

Directions
Cook egg noodles according to package directions.
In a 2-quart casserole dish, combine soup, ½ cup cheese, milk, and sour cream.
Mix well.
Stir in noodles, vegetables, and chicken. Mix well.
Microwave, covered, on high for 10 minutes, or until heated through, stirring once.
Sprinkle remaining cheese on top.
