Directions

Position racks in the upper and lower thirds of oven, preheat to 250°F.

Add lemon juice, curry powder and salt in a large bowl, whisk until well blended.

Stir in cashew nuts, toss to evenly coat.

Divide between 2 large baking sheets, spread evenly in a single layer.

Bake, stirring every 15 minutes, 45 to 50 minutes or until dry.

Allow to cool completely.

Store in an airtight container.
