Ingredients

2 packages artichokes
10 each chicken cutlets boneless, skinless
3 tablespoons vegetable oil
2 cups soup, cream of chicken
1 cup mayonnaise
1 teaspoon lemon juice
1/2 cup cheese shredded
1/2 cup bread crumbs
1 tablespoon butter melted

Directions

Cook artichokes according to package directions, drain.

Arrange in greased baking dish.

Brown chicken in oil.

Place chicken on top of artichokes.

Combine soup, mayonnaise, lemon juice.

Pour over chicken.

Sprinkle with cheese.

Combine bread crumbs and butter, sprinkle over all.

Bake at 350 degrees F for 25 to 30 minutes.

Bev's Green Bean Casserole

I make this from time to time for the holidays or dinner gatherings, and it is usually gone in seconds. People seem to like this one better than the classic green bean casserole recipe. I'd suggest substituting the canned corn with about a cup of fresh or frozen corn - it tastes much better. Sometimes I add some chopped potatoes or sliced celery, and I always use sharp cheddar cheese for optimum flavor. Try it for the holidays - you'll be a hit.
