60 minApple pie with cheddar cheese on the side is a New England tradition. This recipe bakes the cheese right into the deal.
Tart Granny Smith or McIntosh apples get tossed with sugar, flour, and a full cup of shredded sharp cheddar, then piled into a baking pan. A buttery cinnamon streusel goes on top, and once it’s golden and bubbling, more cheddar gets scattered over to melt into a salty, gooey blanket.
That sweet-savory combination of warm spiced apples and sharp melted cheese is the kind of thing you taste once and never forget.
Serve it warm with a scoop of vanilla ice cream or a drizzle of hard sauce and watch people fight over the corner pieces.
Chef Tips
- Use the sharpest cheddar you can find. Mild cheddar gets lost next to the sugar and cinnamon. You need that tangy bite to make the contrast work.
- Tart apples only. Sweet apples like Fuji or Gala will make this cloyingly sweet. Granny Smith or Cortland are your best bet.
- Cut the butter into the flour topping with cold hands or use a pastry cutter. You want pea-sized crumbs, not a paste.
