Vegan brown rice and wheat berries cooked together in one pot with sauteed scallions. A chewy, nutty whole grain side dish with hearty texture from the wheat berries.

The wheat berries go in first since they need a full hour of simmering before the rice joins in for the final 50 minutes. The two grains finish together with contrasting textures: tender rice and pleasantly chewy, nutty wheat berries.
Sauteed scallions tossed in at the end add a fresh, oniony bite that cuts through the earthy grains. Simple seasoning with salt and pepper lets the natural flavors of the whole grains come through.
This is a blank-canvas side that works alongside roasted vegetables, stews, stir-fries, or any protein. The wheat berries give it a chewier, more interesting texture than plain rice alone.
Kitchen Tips
- Start the wheat berries a full hour before adding the rice. They’re much denser and need the head start to cook through properly.
- Keep the lid on tight during simmering. The grains need steam to cook evenly, and losing moisture means crunchy, undercooked results.
- Check the water level when you add the rice. If most has been absorbed, add a splash more.
Variations
- Toast pine nuts in butter and add with the scallions for the original non-vegan version of this recipe.
- Add dried cranberries and toasted pecans for a more festive pilaf-style side.
- Stir in fresh herbs like parsley, dill, or thyme right before serving for a brighter flavor.

Directions
In 2qt pan, boil water.
Add berries, return to boil.
Reduce heat, simmer, covered, 1 hour.
Stir in brown rice.
Cover, simmer 50 minutes longer.
5 minutes before rice is finished, sauté scallion until softened.
Combine with rice and wheat mixture, along with spices.
Note: The original recipe called for 2 Tbs. pignoli (pine nuts), tosted in 1 Tbs butter, before adding the scallions.
