Haroset is one of the most meaningful foods on the Seder plate, symbolizing the mortar used by the Israelites, and Bibs Soles’ version is a keeper.

Spy apples (or any firm, tart apple) get finely grated in the food processor, then mixed with chopped walnuts and hazelnuts that still have a bit of chunk to them for texture.

Sweet kosher wine goes in slowly, a few tablespoons at a time, until the mixture comes together into a thick, spoonable paste.

The combination of tart apple, earthy nuts, and sweet wine is something you’ll find yourself snacking on straight from the bowl long before the Seder starts.

Kitchen Tips

  • Use firm, tart apples like Spy, Granny Smith, or Braeburn. Soft apples turn to mush in the food processor.
  • Add lemon juice right after grating the apples to keep them from browning, especially if making this ahead.
  • Pulse the nuts rather than running the processor continuously. You want chunky pieces, not nut butter.
  • If you make this in advance, it will thicken as it sits. Just stir in a splash more wine before serving to loosen it back up.

Directions

Peel and core apples. Cut in quarters. Chop in food processor until finely grated.

Transfer to a bowl and stir in lemon juice, if using.

Add nuts to food processor and chop until finely chopped but with a few little chunks of nuts.

Stir into apples.

Add wine slowly - a few tablespoons at a time - until the mixture looks like a paste.

(If you make this ahead, you will probably have to add more wine as mixture thickens slightly on standing.)
