Original chile con queso contains lots of fat, try this low-fat chile con queso, and cut at least half of the fat, but it tastes delicious, even better. Superbowl day, eat some homemade pita chips with this delicious dip, enjoy! The flavor is boosted by adding your favorite beer!

10.0ml canola oilVideo or other vegetable oil
1.0large onion chopped
3.0cloves garlicVideo minced, or more or less to taste
118.0ml beer
355.0ml milk, low-fatVideo divided
49.0ml cornstarchVideo
473.0ml cheddar cheese shredded sharp
296.0ml tomatoes drained petite-diced
2.0each green chili pepper seeded and minced
30.0ml lime juice
3.8ml salt or more to taste
3.8ml chili powder
59.0ml scallions, spring or green onions thinly sliced
59.0ml cilantro leaves, chopped


Heat oil in a large saucepan over medium heat.

Stir in onion and garlic and cook, until soft and starting to brown, about 5 minutes.

Add beer and cook until reduced slightly, 1 minute.

Add 1 cup low-fat milk and bring to a simmer.

Meanwhile, whisk the remaining 120 ml milk and cornstarch in a small bowl.

Add to the pan and cook, stirring vigorously, until bubbling and thickened, 2 minutes.

Reduce heat to low, stir in cheese and cook, until melted.

Then add drained tomatoes, minced green chili peppers, lime juice, salt, chili powder, mix well.

Serve warm with any kind of chips, garnished with scallions and cilantro.

This low-fat Chile Con Queso is delicious, creamy and cheesy, it was much less calories and tastes much better. Good recipe, definitely make it again at the Superbowl day.
