Three ingredients. One skillet. About ten minutes of your attention. That’s all it takes to make a brittle that looks like it came from a fancy confectionery.

You melt sugar straight in a dry pan until it turns a gorgeous golden caramel, stir in chopped pepitas and sesame seeds, and pour the whole thing onto foil. Walk away, let it cool, and snap it into shards.

The pumpkin seeds bring an earthy, slightly grassy crunch while the sesame adds that familiar toasty warmth. Together they make a brittle that’s less sweet and more interesting than the standard peanut version. Wrap it up in cellophane bags and you’ve got a homemade gift that people will actually fight over.

Chef Tips

  • Don’t stir the sugar until it starts melting on its own. Stirring too early causes crystallization and you’ll end up with grainy clumps instead of smooth caramel.
  • Work fast once you add the seeds. Caramel hardens quickly off the heat. Have your foil-lined sheet ready to go before you start cooking.
  • Lightly oil the foil or use a silicone mat. It makes peeling the brittle off much easier and saves you from tearing it into frustrating little fragments.

Directions

In a dry heavy skillet cook the sugar over moderate heat until it begins to melt and continue cooking it, stirring with a fork, until it is melted completely and is golden caramel.

Remove the skillet from the heat, stir in the pumpkin seeds and the sesame seeds, and, working quickly, pour the mixture onto a sheet of foil.

Let the brittle cool and break into small pieces.
