Bodebiremus is a rustic German potato mush made with boiled potatoes, milk, and a touch of flour, topped with crispy cracklings or toasted breadcrumbs. Simple Bavarian comfort food at its finest.

In the German countryside, not everything needs to be complicated. Sometimes a pot of potatoes and some milk is all you need.

Bodebiremus (also called Kartoffelmus) is about as humble as cooking gets. Boil potatoes, mash them, stir in milk over heat until creamy, and thicken with a slurry of flour and milk.

The magic happens on top: a generous scatter of pork cracklings or golden toasted breadcrumbs that crunch against the silky mush underneath.

Traditionally served right in the copper pan it was cooked in. No plating required.

Kitchen Tips

  • Stir constantly once the milk goes in. The flour thickens fast and will stick to the bottom if you let your attention wander.
  • Cracklings (Grieben) are the traditional topping. Render diced pork fat or bacon until golden and crisp, then scatter over the top.
  • For the breadcrumb version, toast them in butter until deeply golden and fragrant.

Directions

Boil the peeled potatoes, and then mash them.

Put them into a ‘Mus’ pan, add milk, and - stirring constantly - bring to a boil.

Stir in a smooth mixture of flour and a bit of milk.

Should be served in the copper pan, with cracklings or roasted breadcrumbs on top.

Serves 4.
