This no-bake icebox cake turns plain chocolate wafer cookies into a creamy, sliceable dessert with zero oven time. Brush each cookie with milk, layer with whipped topping, stack them up, and let the fridge do all the work.

The overnight chill is what transforms this from a pile of cookies into an actual cake. The moisture from the milk and whipped topping softens the wafers until they turn almost mousse-like in texture, while the edges stay just firm enough to slice clean.

Kids love assembling this one, and it’s a solid backup plan when you need a dessert fast but don’t want to turn on the oven.

Kitchen Tips

  • Don’t skip the milk brush. That little bit of moisture kickstarts the softening process so the cookies absorb the whipped topping evenly.
  • Chill longer for better results. Six hours is the minimum, but overnight gives the cleanest slices and the creamiest texture throughout.
  • Press the stacks together gently. You want them to stick but not crack. The whipped topping acts as glue once it firms up.
  • Frost right before serving. If you frost too early and refrigerate again, the outer layer can get weepy.

Directions

Brush cookies with milk; spread each with whipped topping, using about 2 cups in all.

(Refrigerate remaining whipped topping).

Stack cookies in groups of 4 or 5.

Lay stacks together end to end on serving tray, pressing stack together lightly so cookies adhere to one another.

Cover with plastic wrap.

Refrigerate at least 6 hours or freeze 4 hours until firm.

Just before serving, remove wrap.

Frost with remaining whipped topping.

Garnish with sprinkles and decorating gel.
