Holiday Spinach and Artichoke Party Dip

A scrumptious spinach and artichoke dip that tastes amazing with tortilla chips are as a spread for sandwiches.

Ingredients

2 cups sour cream lite or regular
1 envelope ranch party dip mix or onion soup mix
14 ounces artichoke hearts rinsed, drained, chopped
10 ounces spinach, frozen thawed, well drained, chopped
2 ounces pimentos diced, rinsed, drained
1 large bread round loaf, sourdough or any variety, cut into cubes for dipping assorted vegetables for dipping

Directions

Combine sour cream and party dip mix in medium bowl. Stir in artichokes, spinach and pimientos. Cut slice off top of round loaf of bread. Hollow out center of bread leaving 1" shell. Reserve bread pieces for dipping.

Spoon dip into bread shell. Serve warm or cold. To serve warm, bake in preheated 400 degree oven for 20-25 minutes. Cover loaf with foil if browning too quickly. Serve with bread cubes and/or fresh veggies.

Serves about 12.

This is my favorite dip, and I make it every year for New Years. I leave out the pimento, and I use marinated artichoke hearts (not rinsed). My family goes nuts for this, and there is never enough!

Baked Chicken Legs

What a luscious recipe! The chicken falls off the bone and the savory 'gravy' is awesome soaked in the whole grain peasant bread. My only question is, "where is the baking?". I cooked this on the stove top in my dutch oven.
