| 1 | pound | salmon fillets | |
| 1 | teaspoon | oregano | dried |
| 2 | each | garlic cloves | minced |
| 1 | x | black pepper | to taste |
| 1 | each | tomatoes | thinly sliced |
| 1 | each | onion | thinly sliced |
| 2 | tablespoons | parsley leaves | fresh, chopped |
| 1/4 | cup | bread crumbs | |
| 1 | tablespoon | vegetable oil |
Spray shallow baking pan with non-stick coating. Place fish in baking pan and sprinkle with oregano, garlic and pepper. Layer with tomato, onion and parsley. Mix bread crumbs with oil and sprinkle on top of fillets. Bake at 450 F. for 8 to 10 minutes or just until fish flakes easily.
Simple and delicious. I used seasoned bread crumbs with the oil and it came out wonderfully. Even my picky 9 year old son thought it great!
