25 minThis fettuccine Alfredo swaps the usual heavy cream for evaporated skim milk and trades rich pork sausage for lean turkey Italian sausage, cutting the fat significantly without losing the creamy, cheesy appeal. The evaporated milk has a natural richness from its concentrated texture that mimics cream surprisingly well.
Softened margarine, grated Parmesan, and black pepper get tossed with hot pasta and the evaporated milk to form the sauce. The heat from the freshly cooked fettuccine melts everything together into a silky coating. No stovetop sauce-making needed.
The chopped fresh tomato sprinkled on top at the end adds a bright, acidic pop that cuts through the richness. Don’t skip it. That little bit of freshness keeps each bite from feeling heavy.
Kitchen Tips
- Cook the turkey sausage fully until no pink remains in the center. Turkey sausage doesn’t show doneness as obviously as pork, so cut one open to check.
- Toss the pasta with the sauce immediately after draining, while it’s still hot. That residual heat is what creates the creamy emulsion.
- Use freshly grated Parmesan for the smoothest melt. Pre-grated cheese has anti-caking agents that can make the sauce gritty.
- Season aggressively with black pepper. It’s the main seasoning here beyond the Parmesan and sausage.
Variations
- Use chicken Italian sausage if you can’t find turkey sausage.
- Add sauteed garlic and baby spinach to the pasta for extra vegetables and color.
- Substitute whole wheat fettuccine for more fiber and a nuttier flavor.
