This fettuccine Alfredo swaps the usual heavy cream for evaporated skim milk and trades rich pork sausage for lean turkey Italian sausage, cutting the fat significantly without losing the creamy, cheesy appeal. The evaporated milk has a natural richness from its concentrated texture that mimics cream surprisingly well.

Softened margarine, grated Parmesan, and black pepper get tossed with hot pasta and the evaporated milk to form the sauce. The heat from the freshly cooked fettuccine melts everything together into a silky coating. No stovetop sauce-making needed.

The chopped fresh tomato sprinkled on top at the end adds a bright, acidic pop that cuts through the richness. Don’t skip it. That little bit of freshness keeps each bite from feeling heavy.

  • Cook the turkey sausage fully until no pink remains in the center. Turkey sausage doesn’t show doneness as obviously as pork, so cut one open to check.

Directions

Spray large skillet with no-stick cooking spray.

Heat over medium-high heat about 30 seconds.

Add lean turkey Italian sausage.

Cook, uncovered, 14 to 16 minutes or until lightly browned andamp; no longer pink in center, turning occasionally.

Combine fettucine with all remaining ingrediants except tomato.

Toss untill fettucine is well coated.

Spoon onto large platter.

Top with sausages.

Sprinkle with chopped tomato.
