Succotash is one of those all-American side dishes that’s been on tables since before there was an America. And this microwave version makes it embarrassingly easy.

Lima beans and sweet corn get heated together until tender, then tossed with butter, chopped pimentos for color, a splash of half-and-half for richness, and a pinch of sugar to bring out the natural sweetness of the vegetables.

No stovetop babysitting, no pots to scrub. Just 25 minutes and you’ve got a creamy, colorful side that pairs with everything from fried chicken to grilled pork chops.

Kitchen Tips

  • Thaw the frozen lima beans and corn completely before cooking. Starting from frozen adds cooking time and gives you uneven results.
  • The pimentos aren’t just for looks. They add a subtle sweetness and a peppery note that rounds out the dish.
  • Stir well after adding the cream and butter so everything gets evenly coated. Nobody wants a dry bite in the middle of all that richness.

Directions

Place lima beans and corn in a large, heat-resistant, non-metallic bowl.

Heat, covered, in Microwave Oven 12 minutes or until vege- tables are hot.

Add remaining ingredients and stir to combine.

Heat, un-covered, in Microwave Oven 4 minutes or until heated through.
