Spiced olives are the easiest homemade Moroccan-style appetizer: drained olives tossed with your favorite spice blend and left to marinate overnight. Transforms ordinary olives into something bar-worthy.

This is the simplest upgrade to jarred olives you can make at home. A quick toss with spices and a day in the fridge transforms bland grocery-store olives into something that rivals what you’d pay top dollar for at a Moroccan market or tapas bar.

The secret is patience, not complexity. Olives need time to absorb flavor. Tossing them and serving immediately does almost nothing. Twenty-four hours minimum in the fridge lets the spices penetrate the olive flesh and cling to the surface, layering aromatics into every bite.

Drain the olives thoroughly before spicing. The brine from the jar dilutes anything you add and washes the spices right off. A quick rinse and pat dry is ideal.

Mix and match your spices based on what you’re serving them with. Cumin and coriander for Moroccan. Fennel and chili for Italian. Lemon zest and thyme for French.

Kitchen Tips

  • Drain and rinse olives thoroughly. Leftover brine drowns out any spice you add.
  • Toss in a little olive oil with the spices. Oil carries flavor and helps the spices stick to the olives.
  • Use a lidded jar or container so you can shake it. Shaking every few hours coats every olive evenly.
  • Bring to room temperature before serving. Cold olives taste one-dimensional; warm ones bloom with flavor.

  • Italian: fennel seed, red pepper flakes, garlic, and oregano.
  • French: fresh thyme, rosemary, lemon peel, and cracked black pepper.
