Cholent is the original slow-cooked meal, born from the Jewish tradition of not cooking on Shabbat. Everything goes into the pot on Friday afternoon, the flame gets turned down low, and by Saturday lunch you’ve got a stew so thick and rich it practically holds the spoon upright.

Meat and soup bones melt into the broth overnight while potatoes, pearl barley, red beans, and lima beans absorb every drop of flavor. The onions and carrots dissolve into the background, sweetening the whole pot.

There’s no stirring, no fussing, no peeking. You just trust the process and wake up to something extraordinary.

Kitchen Tips

  • Keep the flame as low as possible; a hard simmer will dry it out and scorch the bottom
  • Check the water level before bed and top off if needed so nothing boils dry
  • Place the potatoes on top of the meat so they steam rather than stick to the bottom
  • Soak the beans overnight before adding them to ensure they cook through fully

Directions

Put everything in a big pot, season to taste and let it cook over a low fire over night.

It should cook 18 to 24 hours.

The water should not boil dry, nor should a high fire be used, or it will burn.
