Ingredients

1 each herring boned, skinned, cut into 1 inch diagonal pieces
1/3 cup red wine vinegar
1/2 cup olive oil
2 teaspoons sugar
2 teaspoons dill weed dried, chopped

Directions

Mix everything except the fish together.

Place fish in deep dish and pour the mixture over it.

Refrigerate for 4-6 hours.

Arroz Con Pollo

I used mixed veggies instead of just peas and used capers in lieu of some salt. The rice & chix were finished before all the broth was absorbed. I'll try less broth next time. Great flavors!
