Savoury Mashed Sweet Potato Patties

Ingredients

3 medium sweet potatoes, or yams
3 tablespoons almonds or cashews, ground
3 tablespoons sunflower seeds ground
3 tablespoons coconut grated
1/2 teaspoon cayenne pepper
1/2 teaspoon cumin
1 teaspoon coriander
1 tablespoon maple sugar
1 teaspoon salt
3 tablespoons chickpea flour
1 x ghee (clarified butter) for frying

Directions

Boil the sweet potatoes for 20 to 30 minutes or until tender.

Drain and peel while still warm. Mash.

Mix in all the remaining ingredients except the ghee.

Knead till thoroughly blended.

Divide into 8 portions.

Wash and dry hands and then rub with oil.

Roll each ball in your hands and then flatten into a patty.

Brush with ghee a griddle or skillet.

Over the lowest heat possible, heat the ghee and then fry the patties for 15 to 20 minutes each side until a crisp reddish brown crust forms.

Serve hot.
