Ingredients

1large red onion diced
4Stalks celery sliced
1/4cup sweet red bell pepper diced
28ounces tomatoes, canned crushed
32ounces red kidney beans canned
1/2teaspoon cajun seasoning
1/2teaspoon cilantro
3/4teaspoon chili powder
2teaspoons salt

Directions

Grease non-stick stew pot with 2 tsp olive oil.

Saute onions, celery and red peppers.

Add crushed tomatoes.

Add spices.

Simmer for 15 minutes. Add RINSED kidney beans.

Heat through. Spoon over brown rice.
