Ingredients

2cups quinoa eden quinoa, rinsed
3/4cup parsley leaves fresh, chopped
3/4cup tomatoes diced
1 cucumber peeled seeded and sliced
1bunch scallions, spring or green onions
5 mint sprigs fresh, chopped
4tablespoons olive oil, extra-virgin
2tablespoons plum vinegar to taste
2Garlic cloves peeled and pressed

Directions

Cook Quinoa according to package directions.

Cool.

Combine Quinoa, parsley, tomatoes, cucumbers, garlic, green onions, and mint.

Mix well.

Combine olive oil, plum vinegar and garlic and mix into salad.

Broccoli And Cauliflower Salad

This recipe is great! I have just made the salad half an hour ago and I cannot stop taking little spoonfulls of it! To the recipe as described I have just added a little fresh garlic (two mid-size cloves). I am going to serve it on top of Greek style flat pita bread.
