If you’ve ever craved that bright, citrusy grilled chicken from El Pollo Loco, this copycat marinade gets you close with just five ingredients. Fresh lemon and lime juice mixed with orange juice create a triple-citrus base that tenderizes the chicken while soaking it with tangy flavor. Cilantro and Mexican taco seasoning round it out with herbal freshness and warm spice.

The citrus trio does more than add flavor. The acid breaks down proteins on the surface of the chicken, helping the seasoning penetrate deeper during the soak. Four hours is the sweet spot. Less than that and the flavor stays on the surface. Much longer and the acid starts making the texture mushy.

Grill over medium heat and let the sugars in the orange juice caramelize into those charred, sticky spots that make this style of chicken so addictive.
