Ingredients

1 pound tomatoes diced
1/2 cup white onion chopped
1 cup cilantro leaves
4 each serrano pepper or jalepeno, finely chopped, seeds and all
1/2 cup water ice cold
1 x salt to taste
1 x lime juice to taste

Directions

Mix all vegetables and herbs with the ice water, add salt and lime juice to taste.

Don't stir too much!

This salsa is almost a relish and should be kept crisp, never mushy.

Beef Curry with Orzo

I served the curry with rice instead of orzo. Pretty good recipe. The curry was little soupy, though. Next time, I would add more curry powder, for our family likes foods with lots of flavor.
