Ripe strawberries don’t need much help, but a splash of sweet vermouth and fresh orange takes them somewhere unexpected. This no-cook dessert macerates halved berries with paper-thin orange slices (rind and all) in a mix of orange juice and vermouth, then chills until the flavors merge.

Slicing the orange as thin as possible with the rind still on is what makes this work. The rind softens during the two-hour chill, adding a slight bitterness that balances the berry sweetness. Directions

Wash and hull strawberries, cut in half.

Slice ends off orange, quarter orange lengthwise and slice orange wedges crosswise with rinds left on, as thin as possible.

Put strawberries and oranges in a bowl; mix well.

Mix together the orange juice and sweet vermouth and drizzle over fruit mixture; stir to mix.

Check to see if berries have enough natural sweetness for your taste; if not, add sweetener.

Cover bowl and chill in refrigerator 2 hours before serving; stir gently several times to blend flavors.
