A 5-minute open-faced lunch: a smear of basil pesto on a split roll, a thick slice of ripe tomato, a layer of cheese, and a quick run under the broiler until the cheese bubbles and browns. Four ingredients, and one of them is bread.

Cheese choice changes the whole sandwich. Fresh mozzarella melts into a creamy puddle for the classic Italian feel; sharp cheddar gives it a deli-counter character; feta goes Greek and tangy. Even processed American cheese works in a pinch, with a clean melt and salty backbone.

Toast the roll first if it’s soft. The tomato weeps moisture as it heats, and a fresh untoasted bun goes soggy in seconds. Thirty seconds of dry toasting under the broiler before assembling builds a crisp shield against the tomato juice.

Watch the broiler closely. Pesto contains olive oil and herbs that scorch fast at high heat. Pull the sandwich the second the cheese bubbles up; another 30 seconds and the basil turns black.

Directions
