Pasta with Beet Greens and Raisins

It is really quite simple and delicious, I have made it for several times, very good recipe.

Ingredients

8ounces penne rigate uncooked, mini penne
1/4cup raisins, seedless
1 1/2teaspoons olive oil
2cups beet greens coarsely chopped trimmed
2teaspoons garlic bottled minced
1/3cup almonds slivered, toasted
1/2teaspoon salt
1/8teaspoon black pepper
1x black pepper Cracked, optional

Directions

Cook the pasta according to package directions, omitting salt and fat.

Drain.

While pasta cooks, place raisins in a small bowl; cover with hot water.

Let stand 10 minutes.

Drain.

While pasta cooks and raisins soak, heat oil in a large nonstick skillet over medium-high heat.

Add greens and garlic; sauté 3 minutes or until greens are tender.

Stir in pasta, raisins, almonds, salt, and 1/8 teaspoon black pepper; toss to combine.

Sprinkle with cracked black pepper, if desired.

Applesauce Peanut Butter Squares

I made these with splenda brand sweetner instead of sugar and they where delicious, even my boyfriend loved them it's a great way to reduce the calories. Super great for diabetics! Just sub splenda 1 cup instaed of sugar,and follow recipe as is.
