9 inch cheesecake

| 1 | cup | vanilla wafer | finely crushed |
| 1/2 | teaspoon | cinnamon | ground |
| 1 | tablespoon | egg white | |
| 1 | x | vegetable oil | or cooking spray |

| 16 | ounces | cottage cheese | |
| 8 | ounces | cream cheese | at room temperature |
| 1/3 | cup | sugar | |
| 1 | tablespoon | flour, all-purpose | |
| 2 | tablespoons | orange juice | |
| 1 1/2 | teaspoons | orange zest | finely grated |
| 1 | teaspoon | vanilla extract | |
| 1 | large | navel orange | sectioned, membranes removed |
| 1 | pint | strawberries | thinly sliced |
1. Heat the oven to 350 degrees F.
Combine the vanilla wafers and cinnamon in a bowl.
In a separate bowl, whisk the egg white until foamy and blend it into the crumbs with a fork.
2. Spray a 9-inch springform pan with cooking spray.
Press the crumbs in an even layer in the bottom of the prepared pan.
Bake 10 minutes.
Cool.
Reduce oven temperature to 300 degrees F.
3. Combine the cottage cheese, cream cheese, sugar, flour, orange juice, zest, and vanilla in a food processor until very smooth.
Spoon into the prepared crust and smooth the top with a rubber spatula.
4. Bake until set in the center, 35 to 40 minutes.
Cool in the pan.
Refrigerate until cold.
Loosen the sides of the cake with a small spatula and remove the pan rim.
5. Combine the orange sections and strawberries.
Cut the cheesecake into thin wedges and spoon some fruit on each serving.

Wow! Thank's so much for this recipe! I tried this once years ago. I received all kinds of requests from relatives for the recipe. Unfortunately I lost the recipe after the only time I made it. I have been searching for it for over 20 years and came up empty. Even called and spoke with Borden's. Since I found it originally on Eagle Brand label. They could not help either. It is Fabulous I give it a 10!!
