| 1/4 | cup | olive oil, extra-virgin | |
| 1/2 | cup | onion | diced |
| 1/4 | pound | pancetta | diced |
| 1 | each | bratwurst | diced |
| 1 | each | chicken legs | boned, skin removed, diced |
| 3/4 | cup | great northern beans | dried, soaked in water overnight, drained. |
| 1 | large | tomato | peeled, seeded, diced |
| 2 | cups | chicken broth | |
| 2 | each | bay leaves | |
| 1/2 | bunch | thyme | chopped |
| 1 | x | salt | |
| 1 | x | black pepper |
In a medium saucepan place the olive oil and heat it on medium high until it is hot.
Add the onions and sauté them for 2 to 3 minutes, or until they are tender.
Add the pancetta, bratwurst, and chicken.
Saute the ingredients for 5 minutes.
Add the soaked beans, tomatoes, chicken stock, bay leaves, and thyme.
Simmer the beans for 1 1/2 hours, or until they are tender.
Add the salt and the pepper, and stir them in.
Remove the bay leaves and strain off the liquid (reserve it for a future use).

This was very good! Thanks! I did end up using more fish sause and a little soy sause and garlic salt for flavour. My son ate his whole plate and asked for seconds, and so did my husband. Awesome!
