| 2 | cups | chicken | diced, cooked |
| 1/4 | cup | sour cream | |
| 1/4 | cup | mayonnaise | |
| 1/4 | cup | carrot | finely chopped |
| 2 | tablespoons | cilantro | |
| 2 | tablespoons | capers | drained |
| 2 | tablespoons | sweet red bell pepper | finely chopped |
| 2 | tablespoons | lemon juice | |
| 1/2 | teaspoon | cumin | ground |
| 1/4 | cup | onion | finely chopped |
| 1/4 | cup | red hot pepper sauce (eg. Tabasco) | |
| 1 | each | avocado | wedged, peeled |
| 1 | x | lettuce | leaves |
| 1 | x | paprika |
Toss all ingredients except avocado, lettuce and paprika.
When well mixed refrigerate, 30 minutes.
Serve on lettuce leaves with avocado wedges.
Sprinkle with paprika.

A spectacular cake, but be prepared for snags in the preparation. I used Swiss chocolate for the mousse and had it seize up 2 separate times when I tried to add the egg yolks. I finally used domestic chocolate chips with a bit of cream, and the mousse went smoothly. Worth the trouble? Yes, probably.
