3 tablespoons milk low-fat
2 tablespoons sunflower kernels toasted
2 tablespoons green bell pepper chopped
2 tablespoons carrot chopped
2 tablespoons scallions, spring or green onions sliced
1/4 cup cheddar cheese shredded
1/8 teaspoon black pepper
1 x salt to taste
3 each cherry tomatoes halved

Directions

Pierce potato with tines of fork; microwave on HIGH about 8 minutes until potato is fork-tender.

Season with salt. Mound into potato shells, dividing equally.

Sprinkle with remaining Cheddar cheese.

Microwave on HIGH about 2 minutes until cheese is melted and potatoes are heated through.
