This casserole takes a can of Spam and turns it into something surprisingly refined. A base of hot mashed potatoes gets topped with cubed Spam, then smothered in a sauce of cream of potato soup mixed with dry sherry and Parmesan. Twenty minutes in a hot oven and everything bubbles together into a golden, savory gratin.

The sherry is the ingredient that pushes this past basic casserole territory. It adds a nutty, slightly sweet depth to the soup sauce that rounds out the saltiness of the Spam. Don’t skip it.

This is pure pantry cooking. Every ingredient is shelf-stable or pre-made, and the whole thing assembles in 15 minutes. The kind of recipe that saves a weeknight when you haven’t shopped.

Pro Tips

  • Cut the Spam into small, even pieces so it heats through completely and distributes well across the mashed potatoes.
  • Use hot mashed potatoes, not cold leftovers. They spread more easily in the casserole dish and heat through faster.
  • The soup sauce should be smooth before spreading. Stir the sherry and Parmesan into the condensed soup until no lumps remain.
  • The paprika on top is more than garnish. It adds a warm color and subtle smokiness as it bakes.

Variations

  • Use cream of mushroom or cream of chicken soup for a different flavor base.
  • Layer in frozen peas or corn between the potatoes and Spam for added vegetables.
  • Top with shredded cheddar cheese instead of Parmesan for a more classic casserole feel.
