30 minThese 3-ingredient candy clusters are the kind of no-bake treat that shows up at every church potluck and holiday cookie swap for good reason. Melted butterscotch chips coat crunchy chow mein noodles and salty peanuts, then set into crispy, sweet-salty clusters that disappear fast.
The double boiler is the right call for melting butterscotch chips. Direct heat scorches them quickly, but gentle steam heat keeps them smooth and glossy. Once melted, you have to move fast. Stir in the noodles until every strand is coated, add the peanuts, and start dropping.
The salty peanuts against the sweet butterscotch is what makes these addictive. That sweet-salty balance is why people keep reaching for “just one more."
Chef Tips
- Work quickly once the noodles are in. The butterscotch starts to set as it cools and the clusters become harder to drop cleanly.
- Use a tablespoon to portion and push the clusters off with a second spoon. Fingers get sticky and burned.
- Let them cool completely at room temperature. Refrigerating them makes the butterscotch sweat and get sticky.
Variations

Directions
Melt butterscotch bits in top of double boiler.
Remove from heat and immediately stir in chow mein noodles until all are coated then quickly stir in peanuts.
Drop on wax paper with tablespoon.
Let cool until firm.
VARIATION: Substitute 2 cups Rice Krispies for chow mein noodles for Clusters Royale.
