Ground beef, noodles, and hoop cheese stirred together with cream of mushroom and tomato soup, then baked under a buttery cracker crumb crust. This cheesy slop in a pot is gloriously messy, ridiculously good comfort food.

Y’all, the name says it all and we’re not even a little bit sorry about it.

Ground beef and grated onion get browned up nice and slow, then tossed with cooked noodles and a generous heap of hoop cheese that melts into every nook and cranny.

Cream of mushroom and tomato soup bring it all together into a thick, saucy, stick-to-your-ribs kind of situation.

Pour it in a baking dish, cover with crushed crackers dotted with butter, and let it brown up until the top is golden and crunchy.

It ain’t pretty, but it sure is satisfying.

Kitchen Tips

  • Hoop cheese is a Southern staple that melts like a dream. If you can’t find it, sharp cheddar or Velveeta will work in a pinch
  • Grate the onion instead of chopping it so it practically dissolves into the meat while browning
  • Saltine crackers or Ritz crackers both make a great topping. Crush them coarse so you get some crunch
  • This reheats well the next day. Add a splash of milk if it gets too thick

Directions

Brown meat and onion slowly while noodles are cooking.

When both are done, add cheese to meat.

Add noodles and stir until cheese melts.

Add soup, mix slightly.

Pour into baking dish . Cover with cracker crumbs. Dot with butter and brown.
