Cheese log is the retro holiday appetizer that disappears within minutes at every cocktail party. Three cheeses (sharp New York cheddar, pimento cheese, and cream cheese) get mashed together with Worcestershire, garlic, red pepper flakes, and a touch of mayo, then shaped into thirds and rolled in paprika for that signature deep-red crust.

Grating the sharp cheddar yourself is the most important step. Pre-shredded cheese contains anti-caking starches that prevent the cheese log from binding properly, leaving a crumbly, dry texture that won’t hold its log shape. Block cheese grated on a box grater incorporates smoothly into the cream cheese for a cohesive, sliceable result.

Chilling the mixture for at least 30 minutes before shaping is essential. Warm cheese paste won’t hold its log form; cold cheese mixture rolls beautifully into uniform shapes. If the mixture seems too soft to shape, chill longer.

Rolling in paprika gives the log its iconic visual appeal and adds a sweet, smoky note that complements the sharp cheese inside. For more dramatic flavor, use hot Hungarian or smoked paprika instead of standard sweet paprika.
