This cauliflower scramble is a microwave-only side dish that layers tender vegetables in a cheesy sauce with barely any hands-on work. Frozen cauliflower in cheese sauce does the flavor lifting, while fresh zucchini, onion, and tomato wedges add texture and brightness.

The trick is cooking the vegetables in stages. Zucchini and onion go first in butter until softened, then the thawed cauliflower and cheese sauce get folded in with fresh tomatoes and a pinch of thyme. That final covered stint in the microwave melds everything together without turning the tomatoes to mush.

It’s a solid weeknight side when you want vegetables with some substance but don’t feel like dirtying a bunch of pans. The cheese sauce coats everything and the thyme gives it an herby warmth that lifts it above basic steamed vegetables.

Directions

Heat cauliflower in pouches in Microwave Oven for 9 to 10 minutes or until thawed.

(Pierce holes in pouches with the tines of a fork to allow steam to escape.)

In a deep, 2-quart. heat-resistant. non-metallic casserole place zucchini, onion and butter and heat, uncovered, in Microwave Oven 3 minutes or until zucchini and onion are tender.

Add cauliflower in cheese sauce and tomatoes to onion-zucchini mixture.

Add salt and thyme leaves to mixture.

Heat, covered, in Microwave Oven 5 minutes or until tomatoes are tender.
