| 1/3 | cup | pearl barley | hot cereal variety |
| 3/4 | cup | water | |
| 1/4 | teaspoon | sea salt | optional |
| 1/2 | cup | monterey jack cheese | shredded |
| 1 | can | soup, cream of broccolli |
Combine all ingredients except soup and cheese in a small sauce pan.
Bring to a boil.
Remove from heat, cover and let stand 2-3 minutes.
Add soup (undiluted) and cheese, bake for 20-30 minutes at 350 F or until mixture is heated through.
Suggestion: Add some sautéed onions, bell pepper, celery or spices of your choice.

Swapped out the white wine for apple juice and served with penne pasta (added to pot pre-cooked for the last five minutes). Delicious and the kids love it too.
