| 1/2 | pound | butter | |
| 1 | tablespoon | sugar | |
| 1 1/2 | pounds | onions | peeled, sliced |
| 1/4 | cup | madeira wine | |
| 1 | x | parmesan, parmigiano-reggiano cheese, grated | grated |
Saute onions in butter.
Stir in sugar, lower heat and cook very slowly one hour.
Stir in the wine, cook briefly, and pour over a pound of freshly cooked pasta.
Pass the Parmesan.
